3 small sweet potatoes (1 1/2 lb)
1 tbsp. canola oil
1 mango
1/2 red bell pepper
1/2 small onion
2 tbsp. fresh lime juice
¼ c. fresh cilantro

Directions

Heat oven to 425ºF. Line 2 rimmed baking sheets with nonstick foil. In a small bowl, combine the sugar, chili powder, cinnamon, garlic powder, 1/2 tsp cumin and 1/4 tsp salt miris spa.
Place the pork on one of the prepared baking sheets and rub with the spice mixture. On the second sheet, toss the potatoes with the oil, remaining 1/2 tsp cumin and 1/4 tsp each salt and pepper.
Roast the potatoes, stirring once until golden brown and tender, 20 to 25 minutes. Roast the pork along with the potatoes until the internal temperature reaches 145ºF, 18 to 22 minutes. Transfer the pork to a cutting board and let rest at least 5 minutes before slicing ZMOT.
Meanwhile, in a medium bowl, combine the mango, bell pepper, onion and lime juice; fold in the cilantro. Spoon the relish over the pork and serve with the potatoes and lime wedges, if desired.
